Ingredients
Rub
- ¼ cup brown sugar
- 4 Tablespoons coarse Kosher salt
- 2 Tablespoon freshly ground black pepper
- 2 Tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon cayenne pepper
- ½ Teaspoon chili powder
Sauce
- 1 Cup BBQ Sauce
- 4 Tablespoon of Butter (half a stick)
- 1/3 Cup of Honey
The Fun Part
- Cut the meat into 1 1/2 inch cubes
- Combine the Rub ingredients and cover each piece completely
- Arrange the cubes on a wire rack, then place on the smoker and keep to 225F and 250F for 2 1/2 to 3 hours
- Transfer cubes to aluminum trays along with the BBQ sauce, butter, and honey. Stir evenly to coat the cubes
- Cover in foil and return sauced pork and put back on the smoker for another hour/hour and a half until meet reaches 200F to 205F
- Remove foil, cover with BBQ sauce, and let cook for another 15 minutes, to let the sauce thicken up.
- Remove and Serve
