Caramel Sauce

  1. In a small saucepan over low heat, combine 3 tablespoons sugar, water and corn syrup
  2. Mix together and simmer to thicken

Scallops

  1. Add oil and butter to a saute pan over medium heat
  2. Salt and pepper the sea scallops and add to pan
  3. Coat sea scallops with 1/2 cup of sugar
  4. Allow scallops to brown and caramelize on both sides
  5. Season with salt and pepper

Notes

Spoon some of the glaze over top of each scallop and serve hot
