Ingredients
- 1 (16 ounces) Pork Tenderloin
- 4 teaspoons Olive Oil
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Fresh Ground Black Pepper
- 2 Zucchini, halved lengthwise, then crosswise
- 6 ounces box Tomato Lentil Couscous Mix
The Fun Part
- Preheat grill to medium heat.
- Rub tenderloin with 2 teaspoons olive oil. Sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper.
- Toss zucchini pieces in remaining oil and sprinkle with remaining salt and pepper.
- Grill pork to desired doneness. Internal temperature should read minimum 155 F., on meat thermometer.
- Grill zucchini until tender.
- Remove pork to cutting board. Cover with foil to keep warm.
- Prepare couscous according to package directions.
- Cut pork in thin slices. Serve with tomato lentil couscous and grilled zucchini.
