
Ingredients
- 2 Cups of Canola Oil
- 1/2 Cup of Garlic Cloves
- 1/4 Cup Lemon Juice (Colder the better)
- 1 Tsp Salt
The Fun Part
- Clean Garlic Cloves and remove tips
- Pulse in food processor until chopped up finely
- add salt
- Leave Food processor on low, and slowly poor in oil in a small bead/stream
- Don't go too fast, and watch for a clumping look to it. At the beginning, you want to go super slow
- When you reach 1/4 cup, add 1 1/2 tsp of lemon juice and then continue with oil
- Keep following the previous steps as 1/4 Cup oil to 1 1/2 tsp lemon juice until fully mixed
- When completed, you'll have a frothy white substance
- Boil 1/2" potato cubes till starting to soften, then fry them up with olive oil, Italian seasoning, salt and serve
Notes
Make sure to let the oil emulsify at the beginning. It will look clumpy and almost rounding while it's mixing. If it's too wattery, add sip of ice cold water to get it to bind.
