Ingredients
Tart
- 2 Granny Smith Apples (Peeled, cored, and cut in half)
- 1lbs Puff Pastry
- 1 Cup Sugar
- 1/4 lbs Butter
- 4 Tablespoons of Mascarpone
Caramel
- 1 Cup Sugar
- 1/2 Cup Water
The Fun Part
Tart
- Butter and flour 4 ramekins and set aside
- Make a caramel sauce. Divide sauce among ramekins and let caramel set for 2 minutes
- Divide apple halves amongst ramekins,top each ramekin with a bit of sugar, and pipe some mascarpone into the center.
- Top with a circle of Puff Pastry
- Push gently and bake in oven for 20 minutes or until pastry is golden brown
- Let Apple tarts cool for 5 minutes, then invert into a plate
- Sprinkle a little bit of fleur de sel on top to season
- Garnish with whipped vanilla mascarpone and fresh berries or stewed rhubarb
Caramel
- Combine in a small stainless steel pot, and slow simmer while brushing sides with water and a pastry brush
- Cook until light golden brown
- Pour onto ramekins and let set 5 minutes
