Ingredients

Tart

  • 2 Granny Smith Apples (Peeled, cored, and cut in half)
  • 1lbs Puff Pastry
  • 1 Cup Sugar
  • 1/4 lbs Butter
  • 4 Tablespoons of Mascarpone

Caramel

  • 1 Cup Sugar
  • 1/2 Cup Water

The Fun Part

Tart

  1. Butter and flour 4 ramekins and set aside
  2. Make a caramel sauce. Divide sauce among ramekins and let caramel set for 2 minutes
  3. Divide apple halves amongst ramekins,top each ramekin with a bit of sugar, and pipe some mascarpone into the center. 
  4. Top with a circle of Puff Pastry
  5. Push gently and bake in oven for 20 minutes or until pastry is golden brown
  6. Let Apple tarts cool for 5 minutes, then invert into a plate
  7. Sprinkle a little bit of fleur de sel on top to season
  8. Garnish with whipped vanilla mascarpone and fresh berries or stewed rhubarb
Caramel
  1. Combine in a small stainless steel pot, and slow simmer while brushing sides with water and a pastry brush
  2. Cook until light golden brown
  3. Pour onto ramekins and let set 5 minutes
