Ingredients

  • 1 lbs fresh albacore tuna
  • 2 heads frisee
  • 4 hard boiled eggs (peeled and cut in half)
  • 10 grape yellow tomatoes (cut in half)
  • Juice of 1 lemon
  • 1 tsp white vinegar
  • 1/4 cup olive oil
  • 20 pitted kalamata
  • 4 parboiled fingerling potatoes
  • 1/4 cup small capers, fried

The Fun Part

  1. Season tuna with salt and sear in hot olive oil on all sides until med rare
  2. Combine lemon juice, 1tsp sea salt, vinegar and olive oil in a bowl
  3. Toss frisee, potatoes, tomatoes, and olives in a dressing
  4. On a plate, fan seared tuna slices on top, season with maldon salt, and garnish with fried capers and cut hard boiled eggs
