Ingredients

Rub

  • ¼ cup brown sugar
  • 4 Tablespoons coarse Kosher salt
  • 2 Tablespoon freshly ground black pepper
  • 2 Tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ½  Teaspoon chili powder

Sauce

  • 1 Cup BBQ Sauce
  • 4 Tablespoon of Butter (half a stick)
  • 1/3 Cup of Honey

The Fun Part

  1. Cut the meat into 1 1/2 inch cubes
  2. Combine the Rub ingredients and cover each piece completely
  3. Arrange the cubes on a wire rack, then place on the smoker and keep to 225F and 250F for 2 1/2 to 3 hours
  4. Transfer cubes to aluminum trays along with the BBQ sauce, butter, and honey. Stir evenly to coat the cubes
  5. Cover in foil and return sauced pork and put back on the smoker for another hour/hour and a half until meet reaches 200F to 205F
  6. Remove foil, cover with BBQ sauce, and let cook for another 15 minutes, to let the sauce thicken up. 
  7. Remove and Serve
