This recipe is based on a quantity of 5lbs of Pork
Ingredients
- 5 Lbs of Pork
- 1 cup of cold red wine
- 1 cup of chopped fresh parsley
- 5 tsp of kosher salt
- 1 tbsp garlic powder or 4-5 garlic cloves, minced
- 1 tbsp fresh ground pepper
- 3 tsp cayenne
- 5 tbsp fennel seed
- 2 tsp crushed chili peppers
- 5 tbsp paprika
- 1 1/2 tsp anise
- (optional) add a couple of tbsp of hot sauce of your choice
The Fun Part
- Mix with meat while frigid (the colder it is, the less it will stick to your hands)
- make patties, or use pork casing for sausages
Notes
I've tried removing the crushed chili peppers, as research showed the same recipe more often than not, without the crushed peppers. It still ends up a bit spicy, but nothing exaggerated. Kids will probably not eat though.
